Baked Apples
INGREDIENTS:
DIRECTIONS:

4 large good baking apples, such as Rome Beauty, Golden Delicious, or Jonagold
1 1/4 cup brown sugar
1 teaspoon cinnamon
1 1/4 cup chopped pecans
1 1/4 cup currants or chopped raisins
1 Tbsp butter
3 1/4 cup boiling water

 

 

 

1. Preheat oven to 375°F. Wash apples. Remove cores to 1/2 inch of the bottom of the apples. It helps if you have an apple corer, but if not, you can use a paring knife to cut out first the stem area, and then the core. Use a spoon to dig out the seeds. Make the holes about 3/4-inch to an inch wide.
2. In a small bowl, combine the sugar, cinnamon, currants/raisins, and pecans. Place apples in a 8-inch-by-8-inch square baking pan. Stuff each apple with this mixture. Top with a dot of butter (1/4 of the Tbps). 
3. Add boiling water to the baking pan. Bake 30-40 minutes, until tender, but not mushy. Remove from the oven and baste the apples several times with the pan juices.
4. Serve warm with vanilla ice cream on the side.
Makes 4 servings.

 

Apple Coffee Cake
INGREDIENTS:

1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup sugar
1 teaspoon ground cinnamon
5 1/2 Tbsp unsalted butter, room temperature
1 egg, beaten
1/2 cup whole milk
1 medium Cortland or other baking apple, peeled and sliced

 

 

 

 

1. Set the oven to 375°F. Grease a 9-inch square baking dish with or pie pan a 4-cup capacity.
2. Sift the flour, baking powder, and salt.
3. In a bowl, combine 1/3 a cup of the sugar with the cinnamon, set aside.
4. Cream the butter with the remaining 1/3 cup sugar. Beat in the egg until blended. Add the flour mixture in three additions, alternating with the milk, beating until just combined.
5. Spread half the batter in the baking dish. Lay the apple slices on the batter so they just cover the batter (you may have to overlap some slices). Sprinkle the apples with half of the cinnamon-sugar mixture. Spread the rest of the batter over the apples. Sprinkle the remaining cinnamon-sugar on top.
6. Bake the cake for 25 minutes or until it is golden brown and apples start to bubble at the edges.
Serves 6.

 

Bisquick Apple Coffee Cake
INGREDIENTS:
DIRECTIONS:
2 cups Bisquick mix
2/3 cup of milk or water
2 Tbsp sugar
1 egg
1 tart green apple, cored, peeled, sliced
Topping:
1/3 cup Bisquick mix
1/3 cup packed brown sugar
1/2 tsp ground cinnamon
4 Tbsp butter
1. Preheat oven to 400 degrees F.
2. Grease 8" square pan or 9" round pan. Mix cake ingredients. Spread cake batter in pan. Insert apple slices into the batter evenly throughout the cake. 
3. Mix the topping ingredients of Bisquick, brown sugar and cinnamon. Spread topping mix over top of batter in pan. Add slices of butter all over the top.
4. Bake 20 minutes or until golden brown, testing with a toothpick. 
Serves 4.

 

Classic Waldorf Salad
INGREDIENTS:
DIRECTIONS:
4 cups cubed red Michigan Apples
1 cup halved seedless green grapes
2/3 cup sliced celery
1/2 cup broken walnuts, optional
1/2 cup frozen reduced fat whipped topping, thawed
1/4 cup reduced fat mayonnaise 

Thoroughly combine all ingredients. Serve or chill for 1 hour.
Yield: 6 servings, 2/3 cup each.
Suggested Michigan Apple varieties to use: Empire, Gala, Ida Red, Jonagold, Jonathan, McIntosh, Red Delicious or Rome. 


 

The Perfect Apple Crisp
INGREDIENTS:
DIRECTIONS:

2 large apples
2 large pears
1/2 lemon, for juicing over fruit
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup water
Topping:
1 cup light brown sugar, firmly packed
1 cup all-purpose flour
3/4 cup old-fashioned oats
1/2 cup melted butter


1. Peel and slice apples and pears, dousing them in lemon juice as you go so they don’t turn brown.
2. Place apples and pears in a greased 9-inch pie plate or square baking dish.
3. Sprinkle fruit with brown sugar, ground cinnamon, ground nutmeg and water.
4. Combine remaining dry ingredients in a separate bowl; add melted butter, mixing until crumbly and several small balls form.
5. Sprinkle crisp mixture on top of the apples.
6. Bake at 375°F for 30 to 40 minutes or until apples are tender.
7. Serve with vanilla ice cream.
Serves 8.

 

Apple Bread
INGREDIENTS:
DIRECTIONS:
1/2 cup oil
2 eggs
1 cup sugar
1 1/2 cups all-purpose flour
1/2 tsp. baking soda
1 1/2 cup diced peeled apples
1/4 tsp. salt
1/2 cup chopped nuts
1 tsp. vanilla
1/2 tsp. cinnamon
1/2 tsp. nutmeg

1. Mix first three ingredients together.
2. Add remaining ingredients and mix.
3. Pour into greased and floured “8 x “4 pan.
4. Bake at 300 degrees for 1 1/2 hours.
5. Cool for ten minutes.
6. Remove from pan.
7. Cool on rack.

This recipe can also be baked as muffins and can be frozen.

 

 

Apple Oatmeal Cookies
INGREDIENTS:
DIRECTIONS:
1 cup all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 cup quick cooking oats, uncooked
1/2 cup firmly packed brown sugar
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 egg
1/2 cup vegetable oil
1 tsp. vanilla
1 cup peeled and shredded apples
1/3 cup chopped pecans (optional)

1. Combine first 7 ingredients in a large bowl, mix well.
2. Combine egg, oil, vanilla, and mix into dry ingredients.
3. Add apples. Add nuts if desired.
4. Mix well, then drop by spoonful onto a greased baking sheet.
5. Bake at 350 degrees for 10-12 minutes or until lightly brown.
6. Transfer to a wire rack to cool.
